Tomatillo Salsa
Here's the tomatillo salsa I made. Would you like the recipe?
2 cups diced tomatillos, husks removed (appx. 6 to 8 sm./med.)
1 jalapeño, coarsely chopped with the seeds removed
1 lime, juice and zest
1 cup cilantro, majority of stems removed
2 tbsp salt
4 cloves of garlic, peeled
Process diced tomatillos in food processor until still chunky. Add jalapeno, garlic, lime juice, lime zest, and salt. Process in short bursts until jalapeno and garlic are not easily distinguishable. Add cilantro and process to a finer consistency, to your liking.
I used this on my Black Bean and Cheddar Tacos.
