Homemade Turkey Lasagna

I made this last night, yum yum yum.


12 lasagna noodles, precooked
1 16 oz container ricotta cheese
3 cups mozzarella grated coursely, divided
2 cups parmesean cheese grated finely, divided
1 cup chopped steamed spinach
3 cloves garlic
1 egg
1 tbsp salt
1 lb ground turkey, cooked and drained
2 to 3 cups tomato-based sauce

Preheat oven to 350. In a skillet, brown ground turkey. I like to season mine with salt, garlic powder, and crushed red pepper, but it can be done less spicy to your tastes.

Mix 2 cups mozzarella, the container of ricotta, and 1 cup parmesean cheeses in a medium sized mixing bowl. Add 1 egg, beaten, salt, steamed spinach, and garlic. I like to microplane my garlic so that the consistency is smooth, but well minced garlic cloves will work fine as well if you don't have a microplaner. Combine the ingredients until they are thoroughly mixed.

Heat your tomato based sauce (you can use canned marinara or make your own-- in this case I used leftover 3 cheese and tomato sauce I made a few nights before) in a microwave container, covered loosely, on medium power until warm, but not bubbling.

Grease the bottom of a 13x9x2 inch casserole, preferably glass. Line the bottom with 3 lasagna noodles. Cover the pasta completely with a thin layer of cheese mix, spreading the mix to the edges of the pan. Top with another layer of pasta.

Next, spread half the sauce mixture across the top of the second layer of pasta, keeping the layer somewhat thin. Sprinkle ground turkey evenly across the sauce and press into place with your spatula. Top with another layer of pasta.

Repeat another cheese mixture layer, then top with pasta. Spread the rest of the sauce across the top, then cover with remaining cheeses.

Cover pan with foil and place in preheated oven for 30-40 minutes or until you can see the cheese bubbling through the sides of the glass dish. Uncover and leave in the oven for another 10 minutes or until cheese top is starting to turn golden brown. Remove from oven, let stand for 10 to 15 minutes, then serve and enjoy!

We had a piece of buttered sourdough bread with this, and it was perfect.
